Following the basic recipe on the back of a Nestle Tollhouse Chocolate Chip Package, I tweaked the recipe a bit to make it healthier for my kids.
When I mixed the butter, sugar, eggs, and vanilla, I also added a cup of shredded zuccinni, and blended well with a hand held mixer.
When I mixed the flour, salt, and baking soda, I replaced the flour with Whole Wheat flour and added an extra 1/2 cup to help balance out the moisture from the zuccini. I also had to add a 1/2 cup of sugar to keep the sweetness with the extra flour.
And for some extra fiber, I added two handfuls (about a cup) of crushed Total Cereal. Then add in your choc chips and bake.
My kids noticed a small difference, but they still loved them and were shocked to find out they had vegetables in them!
