I guess I am in the minority, but I don't care for the traditional pumpkin pie. So, this year I have to make one as MIL has to have it or it isn't Thanksgiving. She is going to bake it on Wednesday, but I do get to pick the recipe. So, I can do a chilled Pumpkin Chiffon (which hubby isn't too keen on), or a pumpkin pie that calls for whipping the egg whites (from Southern Living 1980 cookbook) and folding them in to make it lighter, or a more traditional pie but made with Amaretto (from Bon Appetit magazine). I am leaning toward the one with the whipped egg whites.
